1) City = first crack has only just completed
2) City +
3) Full City = on the verge of second crack
4) Full City + = first audible snaps of second crack
5) Vienna = second crack is underway
6) French Roast = second crack is very rapid, nearing its end
7) Italian = 25% charred ash
8) Spanish = imminant fire

I believe the SS stands for Serra do Salitre, the region it is grown in. FC? Fresh crop? Flying Circus from Monty Python? Just a WAGu. Zephyr would know.

this post is a little late in the thread, I would like to throw in an answer to the question that some people had on screen size. the larger the number the smaller the bean will be.

all sieves or screens as they are commonly known are sized by the number of openings per square inch, so a 16 screen is larger than an 18 screen which has more opeings per square inch.

so to size the beans you take two or three differant size screens and mount them in a shaker frame with chutes running from each deck, now as the beans are poured on the top of the deck which is the largest screen they filter down thru the other screens and are sorted as to size, with your smallest screen beign on the bottom which in the coffee indrustry would probably be a size 20.

screens used in the coffee and any indrustry that has to size material are all standard sizes. and the really expensive stainless steel ones if you can get your hands on them are great for BBQ Grills, and if you can find one small enough make great coffee roasting drums of you have the tools to work with it.

How beans are screened for size is correct, however the numbering aspect you suggest isn't. The size (in this case 17/18) represents 17/64." I once had a Zaire Tiny berry I distributed that were 11's; that is, 11/64."
