Temperature Probes

I am in the process of installing a temperature sensor in the coffee toaster, could you help me what is right.
There are several on this site but I do not know which one is correct.

They are way too expensive, without a reason.
You need a K or J thermocouple, fitted inside a sheath appropriate to what you intend to measure, beans or air.
The roaster type also influences the sheath shape, more exactly how much turbulence you have in the measurement area.
