1 lb roasted lasts a week. I can taste the flavor increase to peak, then drop after. Still very good, but interesting to follow the wave of flavor rise and fall.

I seem to have lost any roasting touch I thought I had. Very frustrated to be wasting time and money. I’m hoping someone can provide some insight on roasting at high altitude. I’m at 4400ft. Thank

SSR for heating element
For those driving the heating elements on their roasters with an SSR, do you use a heat sink?

If not, have your relays met untimely deaths?

I don't use one, although I have the SSR (and everything else) screwed into a metal sheet, so that does add a bit of heat transfer. The SSR has been fine for well over a year now, in a non-ventilaed enclosure. That's drawing about 10A on an SSR rated for 25A.
Beware that inside the Fotek 25A there is actually a 12A triac, so the rating is fake.
Me too I found a 16A triac in a 40A SSR, so the false claims are spread probably across their whole line of products.

Though, I continue using them, but for 6A (1300W/230V) heater, which is reasonable.
10A could be a bit at the edge...

However, this is only a warn and not 100% on topic of original post.
The decision to use or not a heatsink depends mainly on SSR metal plate temperature, which is a factor of consumed current, not of triac rating.
If you can keep the SSR in hand for long time during the roast, then you are under 55 C, which is lukewarm for silicon., no heatsink required, rather a better ventilation.
I use the 40A rated Fotek (that I found inside to be 25A triac).
I mounted it on at standard CPU heat sink I had laying around.
Driving 1700-1800 watt it gets 40-45C warm after 10 minutes.
