Cooling beans
Hi all, new guy question...

I stop my gene cafe and quickly dump the beans into a colander. Is it okay to put it in the fridge for 10-15 minutes to quickly cool the beans?
... and absorbing some moisture... odors, and other goodies the are inside a fridge... NO ! :)

Quick enough means be able to touch the beans, i.e. 50-60C, after 3 minutes.
A big metallic tray/platter, large enough to spread the beans in a single layer will do the job equally well.
I get them onto an upturned Patton fan.

Cool to the touch in 3 -4 minutes
