You all probably have seen this, but I read it a week or so ago and found it to be very interesting and thought provoking. I am a retired chemist, but notwithstanding that, a lot of this goes over my head. Yet I think general principles come through even so.

John, thanks for the post! It'll take a month to chew on that one, but worth some investigation.
Interesting how the classic varietals respond very different than their contemporary cousins.
After a brief scan, it appeared to make the case for quicker roasts on the classic varietals....unless I got that backwards?
