Eth Nat Yirg Idido roasted yesterday. I dropped some off at a friends coffee shop. In a few days he will brew it and tell me what he thinks. We believe my roasts are better than what we buy.

So, I bought this Rancilio espresso machine

Really busy trying to get a menu together and change up the drip service and incorporate some other quality/consistency increasing processes.
The drip process right now is 40-45g/L with water temps at about 180......no bueno! The upside is when we bring in the beans Feb. 1, we will not have to do much improve quality. New machines and proper ratios should be quite evident.

Ill give it a go today and let you know. I was playing with the Idea of keeping a right angle to the pitcher already, looks like I just need to keep the steam wand tip submerged.

Greg, come on up this spring. We will be getting things converted and getting the coffee program refined over the next few months.

I find that I like my drip coffees in the 65g/l range, some lower some a bit higher.

Whoa. I'm trying waaaaay too hard!!! My Nuova Simonelli has a 4 hole steam wand. I can bring a quart of water to a boil in half the time it takes on stovetop or microwave using this wand. I'm going to try your less is more approach later today!

Was was the fat content of your milk in the video? We normally have 1% fat milk.

The method works with low fat or full cream milk

Look for milk with a protein content of min 8 gr per 250 ml serve
The light fat milk we are using currently fat content is 3.5 gr per 250ml serve

For commercial machines with abundant steam you can have the steam a little slower at say 3/4 strength

I know some have been interested in what I have run into with this cafe. I hope to be able to get into it a bit more with some before and after pics next week.
Lately I have been renovating. Two of us really, for the last 8 days. attached are some pics of the new bar, which is concrete and some new wall construction. It has been a lot of loooooong days and nights getting through these changes but we are almost there.
The Runner Stone Market and Cafe is closing in on a grand opening party towards the end of this month.

A little more up hill running. Just trim, paint and the dreaded cleaning left.
We are open for business tomorrow.
We did pour them in place, it was the only way to be able to keep the entire top as one piece. Finished by hand :)


AT- We don't currently roast on site, though there are plans to do so in the future.
